The Chancery Rosewood to debut Europe's first outpost of Carbone

London's Chancery Rosewood, located in the former American Embassy at Grosvenor Square, will be home to the first Carbone restaurant in Europe. Olivia Palamountain reports

Reservations for The Chancery Rosewood can now be made for stays from September 1, 2025 onwards.

The much anticipated opening sees the Grade II listed building that previously housed the United States embassy evolve into a new grande dame for London.

Originally built by architect Eero Saarinen in 1960, the mid-twentieth century Mayfair landmark was also the first purpose-built chancery in London.The Chancery Rosewood Today, the building has undergone a meticulous transformation that blends its rich diplomatic heritage with contemporary flair and panache.

British architect Sir David Chipperfield has led the architectural restoration, while French interiors architect Joseph Dirand has designed the suites and communal spaces.

The all-suite property will feature 144 spacious accommodations, many offering sweeping views over Grosvenor Square, Mayfair and beyond. Every aspect of the design celebrates craftsmanship and pays homage to the building's storied diplomatic past.

Culinary offerings will be a central feature, with eight restaurants and bars planned. These include the first European outpost of New York's celebrated Carbone restaurant (the much-celebrated group will also debut at Dubai's Atlantis The Royal this year), as well as a new Asian concept joint.

The Eagle Bar will crown the seventh floor, named after the newly restored 10-foot high, 30-foot wide golden eagle that was placed on the building when it first opened in 1960. The rooftop venue will offer panoramic views across London's skyline.

The property's extensive facilities include a state-of-the-art ballroom hidden beneath the building with capacity for up to 750 guests. Wellness lovers will appreciate the subterranean Asaya® Spa, complete with a fitness centre, 25-metre indoor swimming pool and five treatment rooms.

Luxury retail outlets, yet to be announced, will complete the offering alongside several additional meeting and event spaces.

The Chancery Rosewood also aims to inject fresh energy into London's social scene through a dynamic cultural programme designed to attract both local and global tastemakers, positioning itself as not just a luxury hotel but a cultural destination in one of London's most prestigious neighbourhoods.
